Would you like to know more about Irish food and culture? Brian is an experienced high-end chef with nearly 30 years working across the UK and Ireland. He trained with and worked for some of today’s most famous chefs and restaurants, including Gordon Ramsey and Gary Rhodes in London and the world famous Ballymaloe in Cork. Brian and his partner Jenny started Northern Ireland's only authentic ramen shop in 2018 and have won multiple awards for our delicious noodles and broths. They have hosted many noodle making classes. Brian grew up working on his grandparents farm in the Irish countryside and they used traditional farming methods that are now almost extinct. His passion for delicious food drives everything they do, and they want to bring Irish and Japanese cuisines together to make the perfect fusion comfort food.
