Discover the secret of koji, which is a vital ingredient in fermentation and hidden in sake, soy sauce, rice vinegar, mirin, and miso - all ingredients that define Japanese food. Traditional rice fermentation techniques of koji not only makes food last longer but also brings out sweetness and umami flavour of many types of food. Our private cooking class starts with a short introduction of shiokoji (fermented mixture of sea salt and koji rice), followed by simple cooking of protein (a choice of chicken, fish or tofu), miso soup, activated brown rice, and a few seasonal vegetable dishes (mostly grown at home). Gluten-free and vegan options are also available. Cooking instructions are written in English. After the class, you'll enjoy your meal on a horigotatsu table in the tatami room. Depending on weather conditions, you may be invited to our small family farms to pick your ingredients before the class starts. Our house is accessible by bus from Toyotashi Station. Enjoy local bus journey along the Yahagi River with the view which drifts from city to countryside. We also offer Airbnb accommodation ("Bucolic Riverside Farmhouse with Nature View") if you prefer overnight stay and join cooking class at night to explore nature spots during day time.
We are "kengyo" farmers in a mountainous region of Aichi Prefecture. We grow and sell brand rice called Mineasahi to local shops. We also grow vegetables to rely less on supermarkets and eat in harmony with nature. Our traditional lifestyle of "kengyo" farming to grow our own food while working for another job to make living remains as a way of life in countryside of Japan. I've been a main household cook for more than 30 years. I'm also a main host of Airbnb accommodation ("Bucolic Riverside Farmhouse with Nature View"). I teach international guests how to cook Japanese everyday meal using our home-grown seasonal ingredients. As many Japanese households cook at home, what most tourists eat in restaurants is just a small part of our culinary culture. We would like to share our countryside lifestyle through our passion of food.
