We will begin our journey with an introduction to what pre-hispanic life was like, around the times of the first interactions between the Mayan's and the Aztecs. For example, a very important trait of all food at the time was the perfect aroma and flavor... it was believed that the God's would not accept your offerings of foods to them if these two traits were not right.
Next, we will explore the tools and implements, and also explain what each are used for, and allow the guests to get involved by using first the "molcajete" and "metate" to make two types of salsas by hand.
Next, guests will learn to make two types of tortillas, white and blue, by hand.
Mole, and camote/carrots tacos are next, and we will be making “tacos dorados con mole”
For our salad, we will be creating either a "ensalada de nopal" or guacamole, depending on the ingredients available on that day.
We will then be teaching the guests how to two types of "agua del dia", or fruit water.
All recipes from traditional ingredients.
